THE EGG – THE FOOD WITH THE HIGHEST BIOLOGICAL VALUE

On the scale of "biological values" (what a person needs to live), which goes from 0 to 100, the egg has a value of 91. Milk comes in lower at 83. Several nutrients are naturally present in the egg. Among these, Vitamin K, Vitamin B2 and selenium assume particular importance.
But also to a lesser extent B-complex vitamins (B6 and B12), folic acid and the remaining fat-soluble vitamins A, D and E. In terms of lipids, it offers a favourable equilibrium between saturated, monounsaturated and polyunsaturated fats.
